Step Into Seattle’s Underground With New Pioneer Square Cocktail Bar

The Sovereign opens next week

A new subterranean bar called The Sovereign will hit Pioneer Square next week for a grand opening on Wednesday, September 28. The bar, which held a few soft openings this week ahead of the official opening, sits in the basement of the historic Maynard Building and comes via the owners of The Forge Lounge, located on the pedestrian walkway leading from First and Marion to the ferry terminal downtown.

The concept for The Sovereign combines Art Deco and Art Nouveau decor with French-American and Afro-Caribbean inspired food, original cocktails, and Northwest beer. The Forge’s popular Matcha Mule, which uses matcha green tea powder, will make an appearance on the cocktail menu.

Much of the food menu claims to be locally-sourced and organic, with sections like "table bread," "deviled eggs," "baguettes," and "marmites" devoted to charcuterie, cheese, and plenty of smoked options like oysters, sardine butter, and mornay.
