Capitol Hill: Brace for Your Very Own Paseo

Caribbean sandwiches could roll out as early as next month

Capitol Hill, this is not a drill: Paseo could start slinging its famous Caribbean sandwiches in your neighborhood as early as next month.

Hot off the July opening of a second Paseo in SoDo, owner Ryan Santwire is expanding the company again. The third location will open inside the former Pike Street Fish Fry space at 925 East Pike St; though a definitive opening date hasn't been announced, things are moving quickly.

Expect the same Caribbean-inspired food as the other two locations, along with late-night hours to cater to the night-club crowd.

Santwire purchased Paseo in early 2015 after it shut down amid a bankruptcy scandal that broke the hearts of its legions of fans. He's since reopened the original Fremont location, while the Shilshole location has become home to an Un Bien, operated by the sons of Paseo's former owner and serving very similar food to Paseo. And thus, the great Seattle sandwich wars continue.
