Chef Mark Fuller — whose talents have wrought West Seattle landmarks like fried chicken palace Ma’ono and kitschy-chic Chinese-American bar New Luck Toy — opens his pizza bar, Supreme, at 4521 California Ave Southwest this Sunday, November 12, reports Seattle Met. As the online menu makes clear, Supreme will feature New York-style pizza heaped with traditional toppings like pepperoni and peppers as well as off-the-wall options like spaghetti and meatballs or taco meat with nacho cheese.
To handle the kitchen, Fuller brought on John Montenegro, who worked previously as a sous chef at another first-rate pizza joint, Dino’s Tomato Pie. The Supreme pizzas available whole include options like the dangerously hot Reaper, with spicy coppa, ricotta, ghost chili, and Carolina reaper chili, and the Hawaiian, with Portuguese sausage, pineapple, and jalapeno.
Basic cheese and pepperoni slices, simple salads, and garlic knots will be available, should any diners feel a bit less than adventurous, or just more snacky than starving. Customizing pies is encouraged, too, thanks to a gamut of possible toppings including chorizo, anchovies, sweet onions, cherry bomb peppers, and pepperoncini, to name a few. When it opens, Supreme will allow online ordering for anyone looking to shave off the potential wait time.
Despite the serious food program, Supreme, like New Luck Toy, is decidedly a bar, restricted to customers 21 and over and featuring a game room with pinball machines and Big Buck Hunter, as well as a drinks list overseen by New Luck Toy’s Brendan McAuliffe. Four machines churn out boozy concoctions like a tequila, passion fruit, and habanero slushy. There are also original cocktails, negronis on tap, and an assortment of beer, cider, and wine. Sorry, kids, but this is another exciting addition to the list of places you’re not welcome.
Fuller’s a busy guy this month: He’s also hot off the opening of his Denny Triangle veggie burger emporium, ‘Table, which launched this week in partnership with Canlis alum Doug Kawasaki.
