Chef Monica Dimas, who has made a name for herself owning Neon Taco, Sunset Fried Chicken Sandwiches, and Tortas Condesa, is teaming up with baker extraordinaire Molly Westman to bring Westman’s Bagel and Coffee to Capitol Hill. The walk-up window combining New York-style bagels and coffee in the space that previously housed Manu’s Bodegita will be opening any day now.
When the opening rolls around (an event likely to be announced on the Westman’s Instagram account), the window will operate Monday through Friday, 7 a.m. to 4 p.m.
Westman brings considerable baking chops to the venture, with a resume that includes time at Macrina. She’ll source some ingredients locally, like Willapa cream cheese. Toppings like lox and a vegan cream cheese will be available, Fridays will see a challah bread for sale, and the coffee will come from Caffe Vita.
Meanwhile, Dimas’s other pending opening, Little Neon Taco on First Hill, should be ready by late January.
