Aaron Willis took over as chef of Georgetown’s meat-focused Ciudad back in December, promising to add his spin to the menu. Willis also planned to oversee the rotisserie chicken and cocktails selection for the adjacent Bar Ciudad, which had closed for the winter.
Now comes word that Bar Ciudad is planning to reopen on Thursday, February 16, with draft beer as well as cocktails on tap, cocktail slushies, and cocktails in more traditional forms from David Ramirez, who has tended bar at Bramling Cross, Mamnoon, and Café Presse. The drinks will complement the rotisserie chicken selection, involving all-natural and hormone-free birds dry-rubbed with Willis’ blend of Middle Eastern and Southeast Asian spices.
A la carte sides include dirty rice, potatoes cooked in rendered chicken fat (or vegetarian), wedge salad, and four sauces (chimichurri, puri puri oil, roasted garlic aioli, and mojo verde). You can buy birds by the whole or half, to be eaten inside the bar, on the patio when the weather is cooperating, or taken to-go.
