New York Chef Bringing Japanese Fine Dining to Bellevue

Minamoto aims for a spring opening

Developer Skanska tells Eater it has leased the final retail space at its Alley 111 apartment building in downtown Bellevue to Minamoto, a Japanese fine-dining restaurant. The establishment should be ready for a spring opening.

The project is spearheaded by chef Dylan Xu, currently chef de cuisine at Iki Modern Japanese Cuisine in New York City. He will partner on Minamoto with sushi chef Grant Lin and general manager Issac Zhang, both of whom worked with Xu at Iki.

The restaurant will offer modern Japanese dishes, sushi, and omakase “chef’s choice” dining.

“We’re excited to team up again to introduce our first West Coast restaurant in Bellevue at Alley 111. Our years of experience working together and our vision for high-end, Japanese food will create a one of a kind experience in the region,” chef Lin said in a statement.
