Prolific restaurateur Josh Henderson and his empire-building Huxley Wallace Collective (Westward, Quality Athletics, Kiki Ramen) have settled on the International District for the third outpost of their Great State Burger chainlet. It will take up residence at 504 Fifth Avenue, in a building called The Publix — also set to house Seattle’s first outpost of Eastside’s excellent Dough Zone Dumpling House.
Great State Burger’s ID expansion will open July 6 from 6 to 9 p.m. only; after that, official hours will take hold, and the burger shop will be open daily from 11 a.m. to 9 p.m. This location will also have a late-night walk-up window to serve customers heading home after, say, a round of karaoke.
The Publix opened to residents last fall, but the commercial space has taken a bit longer to fill. Still, Great State will be in good company. Dough Zone Dumpling House, the Chinese dumpling emporium, will hold one of the leases, with an expected opening later this year.
The International District location of Great State Burger will join South Lake Union and Laurelhurst as the initial openings in what Henderson says will eventually be 8 to 10 burger joints. Henderson’s brand of the classic American fast food restaurant involves a low-priced, straightforward menu of locally-sourced burgers, crinkle-cut fries, and shakes.
