Standard Bakery, a favorite for its organic sourdough loaves and diverse sweets like Danishes and pocket pies, is back to its old pop-up tricks — but only until August, as the company builds out a new home in Pinehurst. In the meantime, fans can still grab the goods at a few weekend farmers markets as well as Saturdays from 9 a.m. to 3 p.m. in front of the bakery (and future public storefront) at 11752 15th Ave NE.
Owner Josh Grunig was known for his nomadic nature under the moniker Pocket Bakery, building a following at farmers markets and a Central District gift shop before settling into a retail venue at 400 Fairview N last year. Instead of renewing that agreement when his one-year retail lease ended, though, Grunig decided to combine the back- and front-of-house operations at his North Seattle production facility, the former home of a gluten-free bakery called Antonia’s. Standard shares the small Atrium Square shopping center with tenants including Uncle Mike’s Barbecue and Cider Bar and Soprano’s Pizza, all of whom plan to co-host Standard’s grand opening celebration on a date in mid-August yet to be determined.

When construction is complete, Standard will open a walk-up window more days of the week, with limited outdoor seating, for selling a growing list of pastries, breads, sandwiches, coffee, and even ice cream and ice cream sandwiches made with Sweet Lo’s. Hours aren’t yet set, but will probably start with the morning rush and carry through the evening, since employees will be prepping treats into the wee hours anyway.
Standard is also one of the many exciting local businesses moving into Seattle-Tacoma International Airport, joining forces with with Broadcast Coffee to offer a full selection of pastries and pre-made sandwiches along with a caffeine fix to weary travelers. That expansion isn’t likely to occur before mid-2018, however, and the company doesn’t even know yet where it will be located within Sea-Tac. In the meantime, Pinehurst is the place to be.
Update, 7/24/17: Standard has announced that its grand opening celebration will take place Saturday, August 26 from 10 a.m. to 2 p.m. with live music and a bounce house. Thereafter, the bakery’s walk-up window will be open daily from 6 a.m. to 8 p.m.
