Fancy Waffles on Their Way to Tacoma This Fall

Breakfast food meets chic design

Tacoma’s Proctor District is getting a shiny new breakfast option later this fall: the breakfast-minded Waffle Stop is slated to open in November.

Perhaps unusually, it comes partly from a design firm: California-based Playground Agency are working on the Proctor Street space, showcasing plenty of woody textures and white surfaces, and an all-round modern set of fixtures.

On the food side, there’s a commitment to cooking from scratch and with responsibly-sourced ingredients. It should come as little surprise that breakfast and brunch will be a focus, lunch too.

While the opening is still weeks away, the menu is already online, with a few classics but also items like a bacon cookie butter waffle, and strawberry cheesecake option on the sweet side, with turkey, bacon, and avocado, and Nashville hot chicken waffle sandwiches for the less sugar inclined. The menu also features a few simpler kids’ options.

It’s not 100 per cent waffles — a couple of salads, along with sundaes, shakes, breakfast cocktails, and some fried snacks round out the menu. There’s also some kind of bar component in the works; more is likely to come on that as the opening date nears.
