Top Taco Chainlet Brings Its Biggest Restaurant Yet to the Central District

Capitol Hill-born taqueria Tacos Chukis will open its Central District restaurant—the biggest yet for the local chainlet—on Saturday, October 13. Owner Roberto Salmeron says he’s putting the finishing touches on the restaurant today, with the goal of unlocking the doors at 5 p.m. tomorrow—or earlier if everything falls into place.

The new restaurant at 2203 E Union will seat around 50 people at the base of a mixed-use building at 23rd and Union. The larger location means Salmeron can use the Central District kitchen as headquarters for his other restaurants.

The menu (and operating hours) will be the same as the other locations, anchored by the signature taco of pork adobada topped with melted cheese, guacamole, and grilled pineapple, plus quesadillas, tortas, and burritos.

Tacos Chukis has been on a roll the past couple years, having expanded to South Lake Union in 2016 and Beacon Hill earlier this year. After Saturday, it will adopt regular hours of 11 a.m. to 10 p.m. daily.
