One of Seattle’s Best Barbecue Places Expands Downtown

Sodo-based Jack’s BBQ brings its Texas-style smoked ribs, brisket, and sausage to the Columbia Tower food court next week

Jack’s BBQ, the Sodo restaurant renowned for its Central Texas-style barbecue, is opening in the Columbia Tower food court on Monday, December 17. The menu will focus on the same array of smoked meats — like brisket, ribs, pulled pork, and sausage — that has made owner Jack Timmons’ restaurant a go-to for barbecue lovers in Seattle. This is the first of two planned expansions for Jack’s, which is scheduled to open a location in South Lake Union in January.

The new restaurant in the Columbia Tower, at 701 5th Ave., will serve breakfast tacos loaded with brisket, cheddar jalapeno sausage, or vegetables, from 7 to 9 a.m. After that, the offerings switch to plates and sandwiches featuring smoked meat and sides like potato salad and collard greens. Fans of Jack’s Safeco Field menu will also notice the addition of the formerly ballpark-exclusive Sausage Dog, made with brisket chili, cheese, and jalapenos, to this new restaurant.

Timmons is a former Microsoft employee who brings a tech aficionado’s exacting approach to the barbecue process, and he uses oak, mesquite, and hickory to smoke the restaurants variety of meats.
