Hot off the opening of Westman’s Bagel and Coffee, Monica Dimas is putting the final touches on her biggest restaurant to date, Little Neon Taco on First Hill (1011 Boren Avenue). Dimas, who’s made a name for herself serving outstanding food at walk-up counters, will finally have a full service, sit-down restaurant to further expand her repertoire. If she doesn’t hit any snags in the next few days, Dimas will start serving tacos and more on Tuesday, March 27.
Little Neon Taco is a spin-off of the taco counter Dimas runs out of the Capitol Hill bar Nacho Borracho. With the First Hill restaurant, she’ll serve lunch and dinner, and eventually may expand to weekend brunch. Her traditional Mexico City-style tacos, like lengua and adobada, along with creative riffs like the General Tso’s taco, will form the menu’s foundation. But here, a larger space will mean more Mexican specialties, including the tortas Dimas sells at her Tortas Condesa counter. Little Neon Taco will also serve beer and wine.
Meanwhile, the bagel walk-up Dimas opened in January with Molly Westman, has been doing a brisk business, occasionally selling out before closing time.
