But the Capitol Hill location of the sustainable butcher shop will stay open in Melrose Market

Citing a “recent drop in sales as a result of debilitating construction surrounding the immediate area,” along with a “significant rent increase,” sustainable butchery and sandwich shop Rain Shadow Meats is closing its Pioneer Square location. The Pioneer Square store’s final day in business will be Friday, May 18, but the company will continue operating its original Melrose Market butcher shop on Capitol Hill.

Owner Russell Flint opened Rain Shadow Meats Squared, a spin-off of his Melrose Market butcher shop, five years ago. Both locations specialize in nose-to-tail butchery and locally raised meat, but the Pioneer Square location also functions as a restaurant, making outstanding charcuterie and sandwiches — with favorites like the porchetta — with the shop’s own meats. Each day between now and closing on May 18, the shop will revisit different past menu favorites.

Flint plans to use the new room in his schedule to build up his new home delivery service, which he started last year. The service brings selections from a weekly fresh sheet plus rotating prepared foods and meat and cheese platters to subscribers.
