Travelers passing through Everett’s Paine Field just got a cheesy new treat — and there’s more to come. The iconic Seattle dairy purveyors Beecher’s Handmade Cheese opened a shop at the airport in the main terminal today, serving up pastries, breakfast sandwiches, mac & cheese, and plenty of grilled cheese options (including a kimchi melt). For those needing a caffeine boost before their flight, the hugely popular Caffe Vita (on Eater Seattle’s list of essential coffee shops) will open up a kiosk near the pre-security check point next Tuesday, June 25 (here’s a menu).
These spots join Upper Case Bar, near the departure lounge, as the airport’s main concessions. Upper Case has the airport’s booze needs covered, with a variety of local beer on tap (Scuttlebutt, Diamond Knot), cocktails, and mimosa flights (pun maybe intended).
Built in the 1930s, Paine Field used to be exclusively an industrial and military airport, but finally opened up to commercial travel earlier this spring. Alaska and United are currently operating out of the location (PAE), and there’s a full guide to the facility at Curbed Seattle.
