Trucup, a Seattle-based company specializing in low-acid coffee, will open a cafe on First Hill this September called Trubistro. The cafe will pour Trucup coffee by day and switch to beer, wine, and charcuterie by night. Trucup makes six roasts, all of which lack acids that can be harmful to drinkers with stomach issues like acid reflux.
The First Hill cafe will be the first physical location for the coffee producer, which sells its bagged coffee and single-serve coffee pods through its website and to healthcare and hospital industries. Given its presence among healthcare providers, it makes sense that Trubistro would choose First Hill for its flagship cafe.
During the day, Trubistro will serve pastries, fruit, and salads alongside its coffee. In the evening, it will become more of a wine bar, with West Coast wines, salads, charcuterie, and flatbread. The cafe will open in the new Murano luxury high rise building at 610 Terry Avenue.
