In the past, they’ve been known to whip up a fancy, boozy milkshake, with ice cream and enough sauce (of the liquor variety, that is) to knock you off their charming wooden stools. Bar manager Eric Waks talks up his barrel-aged Makers Mark Julep, which is just $5 for Derby day. They seasoned a 5-liter barrel with Batch 206 Mad Mint vodka for 3 weeks, dumped and rinsed it, then added 5 liters of Makers. Saturday will mark 31 days in the barrel, and they’ll “express” some mint leaves, add the aged, minted bourbon, toss in a little mint simple, and pile it high with crushed ice. Huzzah! The usual suspects are involved in Percy’s & Co’s Balmed Julep, but they’ve taken a left turn somewhere along the way. Their cocktail pulls in added players, like star anise, allspice, and mint-infused bourbon, fresh ginger, Angostura bitters, a bit of soda, some simple syrup, and lime juice.
